Happy Monday everyone! 🥳 Wanted to go back to a recipe I really enjoyed over the winter. I always have miso paste on hand and luckily I don’t have to worry about this going bad anytime soon. 😌 This was particularly a great lunch and reheated nicely. So yum! Had some almond miso chickpeas with @lotusfoods Forbidden Rice and some pickled cabbage. 😋 . Spicy Almond Miso Chickpeas (bottom container) 1 can chickpeas, rinsed and drained 1/2 cup sliced mushrooms 1/2 small red onion, diced 2-3 cloves garlic, minced 1 inch fresh ginger, minced 1 tsp garlic chili sauce 1 tsp miso + 1/4 cup warm water 1 tbsp low sodium soy sauce 1 tbsp almond butter 1/2 cup veggie broth or water . In a small bowl, add warm water and miso paste. Mix together with a fork to make sure miso is dissolved. In a pan, sauté onions and mushrooms until softened. Add in garlic and ginger and sauté until fragrant. Add chickpeas, soy sauce, garlic chili sauce, veggie broth, and sauce to fully combine. Allow to simmer and add in almond butter and miso mixture. Allow to thicken and absorb liquid. Enjoy!

What you need: 1 lb of raw cauliflower florets, 1/2 cup chopped carrots, 1/2 cup plant based milk, 1/4 cup nutritional yeast, 2 tbl sauerkraut juice, 1 tbl tapioca starch, 1 tsp allepo pepper flakes (can sub crushed red pepper), 1/2 tsp smoked paprika, 1 tsp salt, pepper What you do: 1️⃣ On stovetop, bring water to a boil, add salt, cauliflower, and carrots to pot. Cook on simmer 5-7 min until fork tender 2️⃣ Add cooked veggies to blender, add the rest of the ingredients, using tamper to help process. Then gradually bring blender to high, Blend 2-3 min till Until cheese becomes steamy. I want to sincerely THANK all of YOU🙏 in helping me build this wonderful community with loving support & keeping me motivated to share more recipes - THANK YOU to all 200K of you😍. Sharing one of my favorite breakfast food while I visited Taiwan to celebrate this milestone with you - Scallion or green onion pancake '葱油饼'😋- crispy on the outside & chewy on the inside made with homegrown scallions. Sending you loads of positive vibes✨ during these uncertain times, stay well, friends. With gratitude, WoonHeng❤️ Recipe (makes 2 large pancakes - 👀IGTV for steps) 🌱Ingredients (recipe from PeiJen Mama): ~ 400g all-purpose flour ~ 280ml water ~ oil for cooking 🌱Filling for 2 pancakes: ~ 1 cup chopped scallions (or sub with spinach, kale, herbs or onion but adjust the amount accordingly👍) ~ 2 teaspoons [12g] salt ~ 2 tablespoons [26g] oil (used olive) ✅To make the pancake, mix flour & water together until you get a unified mass. ✅Transfer mixture to a cleaned surface knead. The dough is sticky (don't worry), knead for about 8-10 mins. To check, rub flour on your clean hand & knead the dough. If the dough is not sticky, then it is ready. Divide it into 2 portions, cover & let rest for 20 mins. ✅Dust flour on a cleaned surface, roll out the dough into a thin layer (dust flour on the surface with each roll). Add 1 tablespoon oil in the middle, bring the side to dab the oil to get an even coat. Sprinkle dough with 1 teaspoon salt. Add chopped scallions & gently press them onto the dough. Roll it up like a burrito. ✅While holding the dough in the middle, twist to pleat from middle towards each end. Bring one end & tuck it under, then roll the other side like a coil & stack it up to get a tall 2-tier layers. Let dough rest for another 20 mins, covered. ✅To cook the pancake, press dough lightly to flatten it. Preheat a nonstick pan over low heat & place pancake into the pan. Cook until slightly brown & flip, then cover with a lid & cook for another 2-3 mins (low heat is important). ✅Remove lid, swirl 1 tablespoon oil around the side of the pancake & pan fry until golden brown, flipping halfway. ✅Serve immediately😋
