So, keep reading to discover eight healthy baking goods you need to cook NOW! We hope that you find these tasty desserts as yummy as we do ;)

1. Vegan Breakfast Cookies by Rainbow Plant Life

Breakfast just became the most important meal of the day thanks to Rainbow Plant Life’s Vegan Breakfast Cookies recipe! This recipe is so healthy, in fact, that you will bear no guilt for having these delicious cookies first thing in the morning. 

Some of the wholesome ingredients featured in this gluten-free, soy-free, and oil-free tasty recipe include:

  • Oats
  • Almond butter
  • Seeds

Nisha, the founder of Rainbow Plant Life, makes it super easy to customise these cookies to your tastebud’s liking. For example, she recommends omitting the shredded coconut and simply adding more oats if you aren’t a fan of coconuts! Almond butter isn’t a must, as well - any vegan butter will do. You are also welcome to mix and match whatever type of seeds and fruit you want to add to the cookie (we personally love cranberries).

In case you were wondering if it’s acceptable to eat cookies for breakfast, the answer is a hard yes. Healthy vegan breakfast cookies are on the blog, and not only are they great for breakfast, especially those busy mornings when you’re running out the door with your coat half on and wondering if you put deodorant on…but they’re also pretty perfect for a pre- or post-workout snack. ⁣ ⁣ Or, an afternoon pick-me-up snack to go with your 3 p.m. black coffee/oat milk latte/herbal tea/mushroom latte (whatever your beverage jam is). You could even incorporate them into your meal prep, and lets be honest, meal prepping cookies is much more fun than meal prepping beans (as much as I do love beans, there’s no contest). ⁣ ⁣ They’re vegan, gluten-free, oil-free, soy-free, and refined sugar-free. But, they don’t taste like cardboard, I promise! They’re chewy, nutty, sweet but not to sweet, and they’re easy to customize. No almond butter? Use peanut butter, cashew butter, or for a nut-free option, choose tahini or sunflower seed butter. 2. Beetroot Brownies (Vegan + Gluten-free) By Rhian’s Recipe

These Beetroot Brownies (Vegan + Gluten-Free) by Rhian’s Recipes have turned me into a beet-believer! 

It’s no surprise that Rhian, the incredible chef behind Rhian’s Recipes, was able to create such a delicious brownie using beetroots. She’s also the incredible mastermind behind her coveted avocado brownies, sweet potato brownies, and black bean brownies. There’s seemingly nothing she can’t make into a delicious dessert.

Her Beetroot Brownies (Vegan + Gluten-Free) certainly don’t taste like the vegetable and are instead sweetened using pitted dates. Other ingredients include:

  • Smooth almond butter
  • Unsweetened almond milk (or another plant-based milk alternative)
  • Ground almonds
  • Cocoa powder
  • Vegan chocolate chips

3. Banana Bread Chocolate Chip Cookies by Emily Daniels

While the world is currently going buck wild for sourdough bread, we’re going to hold off on jumping on that quarantine bandwagon as we have no intention of abandoning our first bread love: banana bread.

Emily Daniels, the chef behind Wholesome Donista, put up an incredible Banana Bread Chocolate Chip Cookies recipe that took our two favourite sweets to a whole new level! And with a slogan like, “have your cake and be healthy too,” you can feel free to indulge as you please with these healthy cookies. You will need: 

  • Grain-free flour
  • Baking soda
  • Baking powder
  • Salt
  • Mashed bananas
  • Dairy-free sour cream
  • Coconut oil
  • Coconut sugar
  • Flax egg
  • Vanilla extract
  • Dairy-free chocolate chips

Banana Bread Chocolate Chip Cookies (Vegan/Paleo) 🍪😋 Recipe: 2 1/2 cups grain free flour blend (I used Bob’s Red Mills Paleo flour / can sub GF flour or AP flour of choice) 3/4 tsp baking soda 1/2 tsp baking powder (*If paleo can increase baking soda by 1/4 tsp and sub 1/2 tsp cream of tartar + 1/8 tsp arrow root powder instead of baking powder) 1/2 tsp salt 3/4 cup mashed banana 1/2 cup dairy free sour cream (I made my own by blending 1/3 c soaked cashews, 3 tbsp water, 1.5 tsp lemon juice and 1/2 tsp acv but can use store bought) 1/2 cup coconut oil (melted and cooled) 1 cup coconut sugar 1 flax egg (1 tbsp ground flax + 2 1/2 tbsp water, let sit for 5-10 mins) 2 tsp pure vanilla extract 1/2 cup+ dairy free/naturally sweetened chocolate chips and/or nuts Instructions: In a medium sized bowl combine coconut oil, coconut sugar, flax “egg”, vanilla, banana, and “sour cream”. In a separate bowl whisk together flour, baking soda, baking powder (or paleo alternative) and salt. Fold into the banana mixture. Then add in chocolate chips and or nuts if you want. Bake at 350 for 10-13 minutes until edges are slightly brown.

4. Fudgy Vegan Brownie Cookies by Minimalist Baker

Minimalist Baker has by far some of the best recipes out there for beginners. All of the recipes created by Dana, the primary recipe developer, fall into three main categories:

  • 10 ingredients or less
  • 1-bowl
  • 30 minutes or less to prepare

So whether you are a seasoned chef who could take on Gordon Ramsay in a cook-off or you are purchasing your first whisk, Minimalist Baker is a great place to start. 

Okay, now that we’re done fangirling, let’s dive right into one of their delicious and healthy baked goods: Fudgy Vegan Brownie Cookies! We can’t reiterate enough how much we’re loving these tasty combos of delicious desserts, like cookies and brownies! For this recipe, you’ll need:

  • Almond flour
  • Vegan dark chocolate
  • Walnuts
  • Cocoa powder
  • Baking powder
  • Sea salt
  • Coconut sugar
  • Large Medjool dates
  • Aquafaba (the water in chickpeas - it acts similarly to the property of egg whites in cooking)
  • Coconut oil
  • Vanilla extract

5. Peanut Butter Cookies by The Edgy Veg

We love peanut butter! Add this into a cookie and you’ve got yourself the perfect sweet combo. For The Edgy Veg’s Peanut Butter Cookies, you’ll need:

  • Peanut butter (duh)
  • Earthbound 
  • Sugar
  • Flour
  • Corn starch
  • Baking powder
  • Pink Himalayan Rock Salt
  • Molasses (or light molasses)
  • Vanilla

After mixing this together in a bowl, use your hands to mould them into small balls and put them on a greased pan. Press these between your hands, put on a pan, and use a fork to press down the top of the cookies - bake, and then eat! This will be your go-to easy, vegan cookie recipe

6. Rich Vegan Fudge Brownies by Rosslyn Marie

The last brownie but not least on our list are Rosslyn Marie’s Rich Vegan Fudge Brownies! Get ready for some melt-in-your-mouth goodness thanks to this easy, healthy recipe that only needs ten freakin’ ingredients, including:

  • Coconut sugar
  • Almond butter
  • Chickpea flour
  • Cocoa powder
  • Ground flax
  • Maple syrup
  • Vanilla
  • Chocolate chips
  • Baking powder
  • Baking soda
  • Salt

You’ll likely have most of these ingredients in your cabinet anyway, so it should be fairly easy to get started. Best of all, this recipe is gluten-free, oil-free, and refined-sugar-free! 

7. Lemon Cake with Olive Oil & Coriander Seed by Wicked Healthy 

Wicked Healthy’s recipe for their Lemon Cake with Olive Oil & Coriander Seed is simply to die for! There are definitely more steps and ingredients to this recipe, but we certainly think it’s worth the extra effort, as the end result is absolutely mouth-watering! For the cake, you’ll need the following ingredients:

  • Psyllium husks
  • Water
  • Coriander seeds
  • Unwaxed lemons
  • Caster sugar
  • Plain white flour
  • Baking powder
  • Salt
  • Extra virgin olive oil
  • Soy milk
  • Lemon juice
  • Vanilla extract

8. Chocolate Coffee Cake with Vegan 'Butter' Cream Frosting by Esra Tok

Last but not least on our delicious list of healthy baking goods is Esra Tok’s Chocolate Coffee Cake with Vegan ‘Butter’ Cream Frosting! The photo featuring the delicious cake was Esra Tok’s most-liked photo of 2019, and it’s easy to see why. Vegan chocolate coffee cake is especially hard to find, so we are thankful that talented and cruelty-free chefs like herself take the time to share their amazing creations with us! This year's first post with your favorite picture from 2019: chocolate coffee cake with vegan 'butter'cream frosting ☕🍫🍰 Here's the recipe if you want to try it out: Ingredients for the batter - 1 c. (240 ml) non-dairy milk - 1 tbsp apple cider vinegar - 1/4 c. (50 ml) melted coconut oil - 1,5 c. (210 g) + 3 tbsp flour - 3/4 c. (165 g) brown sugar - 2 tbsp cacao powder - 2 tbsp coffee powder - 1 tsp baking powder - pinch of salt Ingredients for the frosting - 1/2 c. (115 g) soft margarine - 2/3 c. (85 g) powdered sugar - 3 tbsp cold espresso - 2 tsp cacao powder Ingredients for the ganache - 1/2 c. (125 ml) non-dairy cream - 1/3 c. (60 g) dark chocolate Method Preheat your oven to 340F/170C. In a bowl, combine wet ingredients and whisk until combined. Add rest of the ingredients and mix until well combined. Pour into a lined baking tin (20 cm) and bake for about 35-40 minutes. Let it cool completely. For the frosting cream margarine on high then add in icing sugar, coffeeand cocoa powder. For the ganache chop chocolate into small pieces. Pour nearly boiling cream onto the chocolate and stir until melted and smooth. To assemble the cake, cut the sponge horizontally in half. Spread the frosting on the first half and add the second half on top. You can also cover the sides of the cake.
