Ingredients and instructions for one serving

  • ½ lime, sliced into four wedges
  • Ten mint leaves
  • 2 tsp sugar
  • ice cubes

To make it, combine the lime wedges and sugar in a glass and stir until juices are released from the limes. After that, clap eight mint leaves in your hands to release their aroma, then rub them along the edge of the glass. Put the mint leaves in the glass and gently muddle them.

Finally, add the ice cubes and pour soda water into the glass. Add two mint leaves for garnishing and stir gently. And that’s it.

2) Kombucha Mimosa

Drink an alcohol-free mimosa to start your brunch! This vegan mocktail recipe has only three ingredients: kombucha, freshly squeezed orange juice, and starfruit for garnish, which are entirely optional. We assure you that this will be perfect for any brunch.

Ingredients and instructions for two servings

  • ¾ cup freshly squeezed orange juice
  • ¾ cup kombucha
  • starfruit slices, mint pieces, or lime wedges
  • Sparkling water

To make this drink, pour two champagne glasses with the kombucha and orange juice mixture, then mix well. You can also add some starfruit, mint, or lime slices as a garnish to make it more interesting. Top with sparkling water.

Here’s how to make it:

Ingredients and instructions for two servings

Ginger Pumpkin Juice

  • ½ cup water (for the juice)
  • ¼ cup water (for the puree)
  • ¼ cup thinly sliced ginger
  • ¼ cup maple syrup
  • ¼ cup pumpkin purée
  • 1 cup sparkling water chilled

Whipped Cream (Optional)

  • ¼ cup aquafaba of the liquid from cooked, canned chickpeas
  • ¼ teaspoon vanilla extract
  • ¼ cup powdered sugar
  • ⅛ teaspoon of caramel extract and butter extract (optional)

To make the ginger juice, combine maple syrup, water, and ginger segments in a small saucepan. Bring to a boil over medium heat. Turn off the fire and let the ginger soak in the syrup for at least 30 minutes.

As you prepare the pumpkin juice, combine the pumpkin purée and water. Set aside.

In two glasses, divide the ginger syrup (about three tablespoons per glass) and remove the ginger pieces. Pour 1/4 cup pumpkin juice into each glass and whisk to combine.

Fill each glass with half a cup of sparkling water and serve immediately. You can add whipped cream to your ginger pumpkin fizz before the sparkling water (to avoid losing the bubbles).

Here's a recipe for aquafaba whipped cream, which you should try:

Whip the aquafaba until it forms soft peaks using an electric mixer for about 5 minutes. Next, add powdered sugar, vanilla essence, and other extracts if used. Beat for 3-5 minutes, or until stiff peaks form. Sprinkle your favorite caramel sauce and whipped cream on each glass.

4) Bloody Mary

This plant-based version of a traditional cocktail is amazing! With this vegan mocktail recipe, you don't miss the vodka since it uses water kefir instead of alcohol and gives you all the benefits of fermentation. Here’s how to make it:

Ingredients and instructions for two servings

  • 300g cherry tomatoes or fresh and juicy tomatoes (this will make about 250ml or 1 cup of tomato juice)
  • One quartered slice of lemon, juiced
  • ½ cup water Kefir, mineral water, or a juice of your preference
  • Half a lime, juiced (you can use more limes to decorate)
  • Four drops of Worcestershire vegan sauce
  • Four drops of Tabasco or another hot sauce
  • 2-3 drops of wasabi or vegan horseradish paste
  • a pinch of pepper
  • celery salt or table salt

Place the tomatoes in a slow juicer after they have been washed. Press until you have 250ml or 1 cup of tomato juice. You can also juice the limes and lemons in a slow juicer. Combine the juices with the additional ingredients in an airtight jar. Shake well to incorporate the tomato juice. Use lime slices to moisten the glasses' edges and roll them in celery salt (optional). Add three to four ice cubes to each glass, top with a celery stalk, and garnish with a lime wedge. Serve immediately.

5) Piña Colada

And to end the list, we have another delicious classic cocktail. All you need for this plant-based mocktail is diced pineapple (frozen works great as well), coconut cream and water, lime, ice, and a high-speed blender. With this recipe, you can enjoy the tropical vibes at any time of the year. Here’s how to make it:

Ingredients and instructions

  • 3 cups diced pineapple, fresh or frozen
  • ¼ to ½ cup coconut water (as needed to blend)
  • 4 oz coconut cream
  • 1 tbsp lime zest
  • One and a half cups of ice
  • Two limes, juiced

Combine pineapple, coconut cream, coconut water, ice, and lime juice in a high-speed blender. Blend and push down the ice with a tamper to create a slushy texture. Additional coconut water can be added as needed.

Serve with fresh lime zest and a wedge of pineapple, if desired. You also can increase the sweetness by adding a dash of maple syrup.
